Easy Spinach Pasta

Yesterday I was making dinner and I wasn't sure what to make at first. Rhassz and I both love pasta but we usually do the same thing over and over again. Cook pasta, throw in some veggies and a jar of basil pasta sauce and done. 

I went to the store before dinner since I was home from work earlier than usual and I bought all these wonderful things such as spinach and mozarella so I started thinking about a good way to use those wonderful yummie things and turn them into a somewhat healthy dish. And there it was the idea of bringing in some bacon as well and VOILA easy pasta. (I was going to call it one pan pasta but I actually needed two pots and a pan for it)

- Whole weat pasta (penne of spirelli) 
- A bag of fresh spinach
- One ball of mozarella
- 200 grams of smoked bacon
- If you wish some light cream
- Pepper
- Salt
- Fresh garlic of garlic powder
- Olive oil

First start with the spinach. Heat a little bit of oil (flavourless) in a pot, once hot start putting the spinach in there little by little and let it cook down. It might seem like a big amount of spinach but in the end it's not that much. Don't forget to season with salt, pepper and garlic. 

! Neat trick: If you're using fresh garlic just peel it and put it on the end of a fork, stir with the garlic fork through the spinach and it will absorb all the flavour. 

Once all the spinach is cooked and ready, strain it so you get rid of the moist and leave it in the strainer so any excess moist can escape. (I put it into a bowl afterwards)

Now get out the mozarella and cut it in small pieces, this will make it easier to melt once we put all the ingredients together. (If you have cats I suggest you do this a little later because you can't leave the kitchen anymore if you don't put it in a container)

Next get another pot and fill it up with water to cook the pasta. Add some salt and olive oil to the water for some flavour and to prevent the pasta from sticking together. Once the water is boiling pour in the amount of past you desire and let it cook for the time as labeled on the package.

While the pasta is cooking get out a big pan and heat it up without any oils or fat. Check if the pan is hot enough by holding your hand above it or something and get out your bacon strips. Bake them until crispy.

When the pasta is cooked, strain it and at to the bacon, then add the spinach and stir well so all the ingredients mix with eachother. Once mixed you can a little of cream for some smoothness and then add the mozarella cheese. Stir once more and let the cheese melt through the spinach and pasta.

Voila that's all it takes to cook a nice and new dinner. 
This dish takes about 15 tot 20 minutes to make.
